What is light roast coffee?

Light roast coffee spends less time in the roaster – it’s dropped at a lower temperatures (around 350º–410º) to keep more of the coffee’s origin character in the cup. The flavour profile is brighter and more acidic because the natural compounds that create floral, fruity flavours have less time to break down. What we’re left with is coffee with a light body (viscosity) and a delicate, nuanced profile.

Visually, the coffee takes on a light brown, toasted colour (because it hasn't been exposed to prolonged, intense heat). The natural oils remain locked tightly inside, and less time in the heat means less moisture is cooked out. But a light roast doesn’t mean weak. A light roast for espresso, rather than pushing towards smoky, bitter or deeply caramelised notes, is designed to highlight clarity over heavy roast flavour.

What makes light roast coffee so special?

Expression of origin

With less roast character in the way, a cup of light roast coffee can show more of where it came from – the growing conditions, processing method, variety and producer’s work all have room to come through. 

They retain more of their original tasting notes, whether that’s the highly fruity, floral flavours of Ethiopian coffees or the refreshing notes of berries and hazelnut in Costa Rican roasts. 

Bright, complex flavours

The tea-like sweetness of light roast ground coffee shouldn’t taste sharp. 

You should enjoy a bright, juicy acidity that errs towards citrus, stone fruit, berries and florals. Tasting notes ranging from jasmine and bergamot to ripe stone fruit can be delicate, but they’re 

Made for mindful brewing

Light roasts spend less time under heat, so it doesn’t develop the smoky notes characteristic of darker roasts. As the coffee is dense and tightly packed, the complex compounds take a little more precision to extract perfectly. 

So, while you can absolutely dial in a light roast for a bright, juicy espresso, you’ll get the best results with slow, manual filter brewing (V60, Chemex). 

Less bitterness, more nuance

The astringent bite of bitter coffees usually comes from the carbonisation that happens during a dark roast. But because light roast for espresso avoids prolonged, intense heat, they don’t have the same heavy aftertaste. 

You get a clean, tea-like mouthfeel driven by the delicate nuance of your coffee’s origin.

Curated by young producer Julio Bastidas in the Nariño region, it offers the familiar comforting body of a darker roast (milk chocolate and roasted hazelnut). But because the roast is ended before those heavy, bitter compounds develop, you still get a pop of candied orange acidity.

No - light roast coffee isn’t weaker than dark roast. It can have a lighter body and brighter acids, but that doesn’t mean it lacks strength: it just expresses strength through different flavours. 

Why does light roast coffee taste fruity and acidic?

The shorter development of light roast coffee helps preserve the qualities that make each varietal distinct – fruit, florals, citrus and a pronounced acidity that highlights origin notes. 

Is light roast coffee bitter?

A well-roasted light roast shouldn’t taste bitter. A lighter roasting process avoids the prolonged, intense heat of the carbonisation process, which causes darker roasts to have that heavy caramelised flavour. 

What is the best way to brew light roast coffee?

Light roasts are denser, which means they can be a little harder to extract evenly. They respond well to slower, more controlled brewing like V60 and Chemex. These methods give you the precision to draw out their delicate origin notes and acidity.
