What makes Ethiopian coffee so great? 

Ethiopian coffee is quite polarising: you either love the initial hit of citrus (followed by acidic notes), or it’s not for you.

How do these distinct flavours come about? The intense, fruity, sometimes floral sweetness of Ethiopian coffee is the result of processing methods used by local farmers for thousands of years. 

Around 70-80% of Ethiopian coffee is naturally processed – here, the whole coffee cherry is dried before the seed is removed, which, when done well, creates coffees with more jammy sweetness, heavier body, and richer berry or stone-fruit notes. 

In other cases, the coffee is harvested through washed processing – as soon as the coffee cherries are picked, they’re put through a machine (a pulper) that strips away the outer skin and fruit. This processing method creates that cleaner, brighter expression of the origin.

Is Ethiopian coffee always Arabica?

Ethiopian coffee is generally always Arabica, although you may find farmers producing a small amount of Robusta. Robusta, as a species, is beloved for its bold, intense flavour and high caffeine content. 

Most Ethiopian coffees are made up of heirloom Arabica varieties, and at Bold Street, Bookkisa is produced from Gibirinna 74110 and Serto 74112. 

Why does Ethiopian coffee taste so fruity?

You can put the fruit-forward character of Ethiopian coffee down to a mix of high altitude and processing. 

When Ethiopian coffee cherries are dried in the hot sun with the coffee cherry fruit still attached, all those sticky, sweet fruit sugars bake straight into the bean. So, you have coffee farmers to thank for the jammy hits of blueberry in your morning cup. 

Is Ethiopian coffee good for filter coffee?

Ethiopian coffee is lighter in body and brighter in acidity, so it’s arguably one of the best varietals for filter coffee. Brewing methods like V60, Chemex and AeroPress give those floral aromas and layered fruit notes more space to shine. 

Should I drink Ethiopian coffee with milk?

You can do – your coffee, your call! Black brewing will usually show off more of Ethiopian coffee’s florals and acidity. Milk will soften those brighter edges and bring out sweeter, creamier notes. 

What is the best way to brew Ethiopian coffee? 

Again, it depends on the cup you want.
