What do we mean by ‘sweet’ coffee?
When we describe a coffee as “sweet”, we’re not talking about sugar. Coffee doesn’t naturally taste sweet in the same way that a piece of fruit or a spoonful of sugar does. Instead, sweetness in coffee is a perception created by the combination of aroma, flavour, acidity and texture that we experience when we drink it.
That perception can reminds us of familiar sweet foods and ingredients like caramel, milk chocolate, brown sugar, honey and ripe fruit and berries. These flavours aren’t necessary sugars that remain in the cup. They’re the result of hundreds of volatile, aromatic compounds developing from the coffee cherry, through processing and roasting.
In speciality coffee, this is what we mean when we talk about a sweet coffee. At Bold Street Coffee, we select seasonal single-origin coffees for the qualities they bring to the cup and we always search for that clear, rounded sweetness.

What makes naturally sweet coffee so sweet?
The potential for sweetness begins at origin.
A coffee cherry is a fruit and its development is influenced by its environment and terroir; Altitude, weather, climate, soil, shade and the overall growing conditions. Cherries picked at the perfect ripeness can give the producers the raw material they need to produce coffees with the greatest complexity and perception of sweetness.
Processing then plays an important role in how that sweetness is expressed. Natural and Honey processing develops deeper fruity flavours and heavier body that enhances that perception of sweetness. Whereas a washed process can give a coffee a cleaner, more refined balance of sweetness. Anaerobic fermentation can push a whole other dimension, with more boozy flavours.
Roasting is the final part of the sweetness equation before actually brewing the coffee. The roaster's job is to develop the green coffee enough to create that balanced sweetness without masking the characteristics that make it distinctive.
What does sweetness taste like in coffee?
Sweetness can mean varying different things from one coffee to another.
Some coffees have a chocolatey, caramel-like sweetness like our Santa Teresa, that brings bold flavours of Fudge Brownies, Roasted Nuts and Plum Jam that are perfect as a syrupy espresso.
Other coffees like our Argote are bursting with Tropical Fruit and Bubblegum sweetness that make you think sugar has been added.These coffees really shine as a filter coffee as the aroma plays a big part in that perception of sweetness.

How to choose the best sweet coffee for you
The best sweet coffee is the one you most enjoy.
If you're exploring our rotating selection of BSC coffees, our tasting notes and roast profiles can give you a useful starting point.
For a more familiar style of sweetness, look for coffees with tasting notes such as Caramel, Brown Sugar, Milk Chocolate, Nougat or Nuts. These coffees often have a rounder, more comforting flavour profile.
If you prefer a brighter expression of sweetness, look for fruit-forward filter coffees with notes of Berries, Stone Fruit, Tropical Fruit or Citrus. Lighter filter roasts can highlight these flavours particularly clearly, creating a juicy and vibrant perception of sweetness.
